Rustic Apple Honey Cake

This simple to make apple cake with honey is even better after it sits for a day and the honey oozes down into the cake.


  • 1 large, crisp apple, peeled, cored and sliced thin
  • 1/4 cup honey
  • 1/4 cup butter, softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 1/2 cup all purpose flour
  • 2/3 cup milk
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • pinch of Kosher salt


  • Preheat oven to 350 degrees
  • Butter a round, 9 inch cake pan
  • Cut out and place a 9 inch piece of parchment paper at bottom of pan
  • Drizzle the honey evenly onto the parchment paper
  • Arrange the apple slices at bottom of pan and nestle them into the honey
  • In a mixer, cream the butter and brown sugar
  • Add the eggs and blend until combined
  • Add the remaining ingredients and mix until well blended
  • Pour batter into cake pan and spread evenly
  • Bake cake in center of oven for 35 to 40 minutes, until a toothpick comes out clean
  • Allow cake to cool on a wire rack until lukewarm before inverting onto a serving plate
  • Be sure to allow the honey to drip back onto the cake when you remove the parchment paper!
