CHOCOLATE COVERED HONEY CARAMELS

So rich.  So creamy.  So delicious.

If you're looking for a fun and tasty Valentine's Day activity, then look no further. Last night, my wife and I made these dreamy caramels together. The recipe is easy - just take your time and you'll end up with a homemade treat that rivals anything you can find in an expensive chocolate shop.

So sinfully rich. So chocolate-y. So very, very good.

Nothing Hard About Making These

Line the bottom of an 11 x 7 glass baking dish with parchment paper. Fold the sides of the paper to make neat corners.

In a medium pan, add 1 cup sugar and 1 cup honey. Affix a candy thermometer to the side of the pan. Melt the honey and sugar over medium heat and cook until the mixture has a deep golden color. Cut 1 stick (4 ounces) of unsalted butter into pieces and then add the pieces one at a time to the honey/sugar mixture. Blend well with wire whisk after each addition. Then slowly add 1 cup of heavy cream and whisk to blend. Continue cooking until the candy thermometer reaches 265 degrees Fahrenheit. 

Pour the candy all at once into the parchment lined baking dish. All to cool for 20 minutes before chilling in the refrigerator for at least 1 hour. When caramels are fully chilled, use a pizza wheel to cut the slab into bite-sized pieces. Either squares or rectangles are fine - they don't need to be perfect. Return the cut slab to the refrigerator.

Next Comes the Chocolate and Salt

In a double boiler, melt 10-12 ounces of good quality dark chocolate chips. You can use either bittersweet or semi-sweet. When fully melted, remove the pan from the stove. Then remove the caramels from the refrigerator, and drop the cut pieces one at a time into the melted chocolate. Using two forks, turn each caramel to coat with chocolate, and then place each candy of a clean piece of parchment paper. Sprinkle each candy with a small pinch of flaky salt (Kosher or Sea Salt) while the chocolate is still wet.

Return the candy to the refrigerator and chill until the chocolate coating is hard.

Finally you are ready to taste them. Pop one in your mouth. The rich chocolate gives way to the chewy honey caramels, while a hint of salt hits the roof of your mouth. Oh my gosh. These are almost too good to be true.
