A classic Italian dessert, Panna Cotta translates in English as "cooked cream." The honey flavor really comes through in this mild dessert.
- 1 package unflavored gelatin
- 2 tablespoons water
- 2 cups heavy cream
- 1 cup half and half
- 1/4 cup honey (citrus or orange blossom are great choices)
- 1 teaspoon vanilla
- lemon zest and fresh berries for garnish
Add the water to a small bowl and sprinkle the gelatin over the top. Allow to soften and then stir to dissolve.
In a medium saucepan and over medium heat, warm the cream and half and half until it just begins to simmer. Remove pan from heat and allow to cool to lukewarm before adding the water and gelatin mixture, the honey and the vanilla.
Pour into ramekins and and chill at least 4 hours or overnight.
Just before serving, dip ramekins one at a time into a bowl of hot water for 3-5 seconds. Run a knife around the outer edge and invert ramekin onto serving plate. Garnish with fresh berries and a bit of lemon zest. An extra drizzle of honey would also be nice on the plate.
