Buds begin forming in late January or early February, and the blossoms generally open in April. As it takes many months for the orange fruit to develop and mature, you can sometimes see trees laden with fruit that are also in full bloom.

Color and Taste: Orange blossom honey is Light Amber in color. The flavor is mild, but very sweet, with just a hint of citrus. Because it is so sweet, it works well mixed with other foods, such as plain yogurt, or drizzled on some vanilla ice cream. It also works very well in baked goods. This raw unfiltered honey tends to crystallize rather quickly, but this is a natural change that is easily reversed by placing the jar in some hot water (110 degrees or so).
