Floral Source & Origin
Tupelo honey is one of the world’s rarest honeys, cherished by generations of honey lovers. Each year, from mid-April to early May, the white tupelo tree bursts with delicate round blossoms. Greenish-white and short-lived, these blooms appear for only a few precious weeks.
When the weather cooperates — mild temperatures, gentle humidity, soft winds — the bees gather one of nature’s purest nectars. And they seem to relish it just as much as we admire the honey it becomes.
The white tupelo tree (Nyssa ogeche) grows almost exclusively in the southeastern United States, with the Apalachicola River system in Florida and the Altamaha River system in Georgia being the two greatest strongholds. We source our honey from both regions, partnering with skilled beekeepers who protect this fragile heritage crop.
Aging in Bourbon Barrels — A New Expression of a Southern Classic
After harvesting, a select portion of our Tupelo honey is transferred into a retired bourbon barrel. There it rests, slowly absorbing the warm oak character, soft vanilla undertones, and subtle caramel notes left behind by the whiskey.
This gentle aging process transforms the honey into something deeper, richer, and unmistakably handcrafted — without overpowering the natural floral essence that makes Tupelo legendary.
The result is a beautifully layered honey: smooth Tupelo upfront, followed by a whisper of toasted oak and bourbon warmth on the finish.

Slow to Sugar (If Ever)
Tupelo honey is famous for its resistance to crystallization (“sugaring”).
Because of its naturally high fructose-to-glucose ratio, many jars will never sugar at all. However, no honey can be 100% pure Tupelo — bees will always sample a little from whatever else blooms nearby.
If a few crystals appear at the bottom, that’s simply the bees adding their own creative blend into the masterpiece.
