These muffins are a winning combination of yummy flavors - cranberry, orange zest and honey.
- 1/2 cup dried cranberries
- 1 egg
- 1/2 cup milk
- 1/2 cup vegetable oil
- 2 cups all purpose flour
- 1/3 cup honey (orange blossom is recommended)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 salt
- zest from one medium orange
In a small saucepan, bring 2 cups of water to a simmer. Add the dried cranberries, stir and turn off heat. Let seep for 15 minutes, and then drain off the water.
Pre-heat oven to 375 degrees. Oil a 12 muffin tin.
In a mixer, beat the egg to scramble, add the milk, oil and honey and blend together. Add all remaining ingredients and blend quickly until just smooth.
Spoon batter into the oiled muffin tin. Depending on your tin size, this recipe will make 10 to 12 muffins.
Bake for 18 to 20 minutes until golden brown and a toothpick comes out clean.
